Sheet Pan Shrimp Boil

You are sure to be the hit of the party with this recipe, it’s not every day someone shows up to a potluck with a seafood dish!

This is a great choice for a barbecue or family reunion.

Ingredients:

  • 1 pound little yellow potatoes (or red potatoes if you prefer)
  • 3 ears of corn each cut into 6 pieces
  • 1/4 cup of melted unsalted butter
  • 4 cloves of garlic, minced
  • Cajun seasoning: 1 tablespoon
  • 1 pound medium shrimp, peeled and deveined (get the raw, uncooked shrimp)
  • 1 (12.8-ounce) package smoked andouille sausage, thinly sliced
  • Lemon, 1 cut into wedges
  • 2 tablespoons chopped fresh parsley leaves

Instructions:

  • Preheat your oven to 400 degrees.
  • Lightly spray a baking sheet with oil.
  • Fill a large pot with water and salt and bring to a boil.
  • Add potatoes to boiling water and cook until just tender (about 10-13 minutes).
  • Add the corn during the last 5 minutes of the potato cooking time.
  • Drain the water from the pot once time is up.
  • Mix together the seasoning, garlic and butter in a small bowl.
    Place your potatoes, corn, shrimp and sausage on the prepared baking sheet. Ensure everything is in one layer so that it cooks evenly in the oven.
  • Pour your seasoning mix over top of everything and gently toss.
  • Place baking sheet into the oven for 12-15 minutes (until the shrimp have turned opaque pink and the corn is tender).
  • Remove from oven and enjoy with lemon and parsley (if desired).
  • Enjoy!

Who doesn’t love a meatballs? We know that meatballs are always a staple at any potluck attend.

Take boring old meatballs to the next level with this recipe for Baked Buffalo Chicken Meatballs.

This appetizer is so easy to make – and tastes truly great!

Ingredients:

  • 1 lb. of ground chicken
  • 1 egg
  • 1/4 cup of hot sauce
  • 3 green onions, sliced (and a little extra to garnish)
  • 1/4 cup of bread crumbs
  • 1/2 tsp of salt
  • 2 tbsp of mayonnaise

Instructions:

  • Preheat the oven to 400 degrees.
  • Add all the ingredients and mix until thoroughly combined in a large bowl.
  • Begin taking tablespoon amounts of the mixture and roll into balls.
  • Put balls in a cast iron pan.
  • Place the pan in the oven for 20 minutes.
  • Once the meatballs are fully cooked, remove from them from oven and drizzle with extra hot sauce and sprinkle sliced green onions on top.
  • Serve immediately and enjoy!
