Easter Cookie Bark: Easter Dessert Recipe

If you saw our recipe for a delicious No-Bake Mini Egg Cheesecake, you know that we love baking sweet Easter treats. And this Easter cookie bark is just as delicious and picture-perfect as the cheesecake!

This delicious bark is colourful, sweet, and can be made in less than 5 minutes. This crowd-pleasing treat will make you the hit of any Easter party.

This recipe calls for Oreos, but you can use any cookies you like. We know Oreos are generally beloved, but not everyone is a fan.

Hint: If you want to add even more colour to this recipe, use Rainbow Chips Ahoy Mini Cookies instead! The recipe calls for M&Ms, but we also added an option for Smarties if your family is not big on M&Ms.

Once Easter is over, you can make this bark and just swap the pastel-coloured candies and sprinkles to different colours, so you can enjoy this treat during Halloween, Christmas, St. Patrick’s Day, and more.

Ingredients

  • 10 oz white chocolate chips
  • 4-5 Oreos crushed (or whatever cookies you want to use)
  • 1/2 cup Pastel M&Ms
  • Candy Sprinkles

Instructions 

  • Line an 8×8 pan with parchment paper or use your Silpat mat, set aside.
  • Melt white chocolate in microwave until smooth and pour into prepared pan or onto a mat.
  • Sprinkle the M&Ms and cookies on top of chocolate and press down so they stay put.
  • Finish with candy sprinkles.
  • Place the pan in the freezer for about 10 minutes until the chocolate has completely hardened.
  • Break up bark with hands or you can cut it with a warm knife. (Heat knife under hot water then wipe off and cut while it’s still hot. Repeat after each cut.)

The bark will stay fresh in a container for up to 7 days. So your family can enjoy this delicious snack whenever you want.
